Organic Mediterranean Leg of Lamb

IngredientsOrganic Mediterranean Leg of Lamb

- 1 leg of lamb (~1.5 kg)
- 4 large purple aubergines, cut into big chunks
- 1 large (red) onion, cut into 6th
- 1 Tsp. Marjoram
- Olive Oil
- 3-4 anchovies in oil, drained
- 1 Can of whole Plum Tomatoes (800g)
- 1 medium sized onion, finely chopped
- a bunch of fresh parsley, stalks finely chopped and leaves picked
- 1-2 cloves of garlic, finely chopped
- Pepper & Salt
- 1 good Tsp. Fennel
- a good splash of red wine vinegar
