Organic Lamb Tajinetajine

Serves 4-6

Ingredients

Method

  1. Peel, wash and coarsely chop onion
  2. Heat olive oil over high heat in a Dutch oven or tajine
  3. Fry onion in olive oil for 3-4 minutes until golden
  4. Add diced meat to pan Sear meat until well browned (6 to 8 minutes, stirring often)
  5. Sprinkle all the spices over meat
  6. Cover meat with water and reduce heat
  7. Cook, covered, 45 minutes
  8. Add peeled and diced potatoes and carrots
  9. Cook, covered, 25 minutes more
  10. Add cauliflower florets and cook another 20 minutes

Serve with couscous or rice
