Hannah Wilkins cooks breast of Organic Lamb

Hannah Wilkins is a busy lady, but she managed to find time to talk to us whilst she was at the Royal Highland Show in a shed full of sheep to share this recipe with us!

I’m not much of a recipe person really. I either use someone else’s from a book, or chuck it all in and see!

I did manage to make a gorgeous sort of stew/pot roast thing by experimenting with rolled breast of lamb though. TO be honest, I’d never even heard of the cut, but it came in our ‘whole lamb’ box.

Method

I just sealed it in some hot oil, then added chunks of carrot, parsnip, onion, and a good lot of gravy made with ½ beef granules and half veg granules (proper glamorous recipe eh?!), and a sprinkle of mixed herbs and stuck it in on about 180 degrees for about 3 hours.

Not exactly rocket science, just a big ‘hit and hope’, so can’t be very specific with recipe. But it was totally delicious, and turned a really cheap cut of meat into a delicious meal!
